Документ Development of technology of organic marshmallow based on vegetable foaming agent(2024) Bilyk, Anna; Kolesnyk, Nadiia; Kokhan, OlenaThe article presents the results of research on the possibility of completely replacing egg white in the recipe of organic marshmallows with aquafaba vegetable foaming agent. To obtain a vegetable foaming agent, chickpea grains were used, which were grown in compliance with the principles of organic production. Rational parameters for the preparation of aquafaba based on organic chickpea grains were established. The main technological indicators of foam based on egg white and aquafaba were studied. The need to use technological techniques for stabilizing foam based on vegetable protein has been established.
