    The prospects and modern vision of the discipline «Food and sanitary toxicology» are evaluated. That allows applicants to develop a risk-oriented mindset, in which the issues of safety, preservation of health and work capacity are considered as the most important priorities in a person's life and activities; principles and methods of preventive nutrition for various categories of the population that come into contact with harmful substances in the course of their activities, or live in environmentally unfavorable conditions. Оцінено перспективи та сучасне бачення дисципліни «Харчова та санітарна токсикологія». Що дозволяє здобувачам розвинути ризико-орієнтоване мислення, при якому питання безпечності, збереження здоров’я та працездатності розглядаються як найважливіші пріоритети в житті та діяльності людини; принципів і методів профілактичного харчування для різних категорій населення, які контактують зі шкідливими речовинами в процесі їх діяльності, або проживають в екологічно несприятливих умовах.

    Optimizing nitrogen and mineral composition of the highly concentrated mash of raw starch

    For yeast cultivation race used the yeast Saccharomyces cerevisiae DO-11 corn mash with a concentration of 20 and 26% solids, amino nitrogen concentration was adjusted by making the wort amino acids glycine and urea.The use of zinc ions and magnesium in step yeast generation possible to obtain seeding yeast with increased physiological of up to 500m/cm³ and shorten the duration yeast generation to 12 hours. It is proved that the addition of metal nanoparticles in ionic form and should be carried out cyclically at a ratio of 2-3 cycles of metal, and as much without metals.Thus, based on the studies identified the optimal concentration of nitrogen and mineral nutrition by culturing yeast to obtain a large number of physiologically active yeast for fermentation of wort of high concentrations. Для культивування дріжджів використовували расу дріжджів Saccharomyces cerevisiae ДО-11, сусло із кукурудзи концентрацією 20 і 26 % СР, концентрацію амінного азоту коригували шляхом внесення в сусло амінокислоти гліцин та карбаміду. Використання іонів цинку і магнію на стадії дріжджегенерування дозволило отримати засівні дріжджі з підвищеною фізіологічною в кількості до 500 млн/см3 та скоротити тривалість дріжджегенерування до 12 годин. Доведено, що додавання металів у нано- та іонній формі потрібно проводити циклічно у співвідношенні 2-3 цикли з металами, та стільки ж без металів. Таким чином, на основі проведених досліджень визначені оптимальні концентрації азотного та мінерального живлення при культивуванні дріжджів з отриманням великої кількості фізіологічно активних дріжджів для зброджування сусла високих концентрацій.

    Distillation of alcoholic distillate in controlled cycles mode

    Authors have proposed an innovative technology of alcoholic distillate distillation. The construction of distillation column allows to manage the cycles delay and the liquid overflowing by predetermined algorithm. The design of scaly plates is offered. It allows to increase the intensity of the mass transfer process of volatile liquid and steam components. The expediency of using an innovative technology in production environment is proved. Experimental column with a diameter of 650 mm was equipped with 30 scaly plates with distance of 400 mm and movable valves mounted on rods connected with the cylinders DNT 63-50-PPV-A FESTO. Rods was set in motion in accordance with the controller program. Were used applied contact devices with coaxial arrangement of the arched type scales, with the help of which the principle of gas-liquid jets collision was realized. Founded, that using of the proposed technology allows to optimize the process of alcohol distillation of alcoholic distillate by reducing the specific consumption of heating steam by 35 % compared to a typical distillation columns and the increasing of ethanol concentration in the distillate by 28...30 % with the normative losses of alcohol with stillage. If you increase the interval delay of the mash on the plates of the column more than 12 sec. the specific consumption of heating steam and the alcohol concentration in the distillate is rising insignificantly. This causes the decreasing of column liquid throughput. Proposed design of the contact devices allows to exclude the unidirectionality of the fluid flow, the possibility of stagnant zones formation on the steps of the phase contact, the sticking of alcoholic distillate suspended particles on the surface of the plates and allows to increase the intensity of the mass transfer process of liquid and steam volatile components and extend the lifetime of distillation column without its service stop.

    From experience of using mechatronics subsystems in rectification technology

    Authors suggest the energy saving technology of the rectification with controllable cycles of delay and overflowing of liquid without interrupting of steam and liquid flows supply in the column due to additionally installed valves on the moving rods along the entire height of the column connected with the driving mechanisms, the action of which is carried out according to the predetermined algorithm.Using of mechatronics subsystems allows to implement full (single) or separated (fractional) liquid overflowing on the plates of the distillation column under conditions of cyclic mode. Technical solution allows to extend the interval of liquid and steam contact.

In a production environment studied its impact on the microbiological and biochemical processes, quality intermediates and alcohol and confirmed the efficiency of the drug "Polidez" kontaminuyuchoyi to inhibit the development of microflora.
