Abstract
Native amaranth flour demonstrates high nutritional potential: protein content 15.8%, lipids 6.2%, ash 2.4%, significantly exceeding premium wheat flour. The amino acid profile features an elevated lysine concentration (6.1 g/100 g protein). Water and oil holding capacities are 2.15 g/g and 1.85 g/g, respectively, which are 35% and 22% higher than the wheat control. Amaranth starch gelatinization begins at 64.5°C with a peak viscosity of 1250 mPa·s. Total phenolic content (32.5 mg GAE/g) provides an antioxidant activity of 48.2% (DPPH). Amaranth flour is recommended as a self-sufficient structuring agent for gluten-free food systems without the need for exogenous hydrocolloids.
Нативне амарантове борошно має високий харчовий потенціал: вміст білка 15,8%, ліпідів 6,2%, золи 2,4%, що суттєво перевищує показники пшеничного борошна вищого сорту. Амінокислотний профіль характеризується підвищеною концентрацією лізину (6,1 г/100 г білка). Водо- та олійутримуюча здатність становить 2,15 г/г та 1,85 г/г відповідно, що на 35% та 22% вище за пшеничний контроль. Желатинізація амарантового крохмалю розпочинається при 64,5°C з піковою в'язкістю 1250 мПа·с. Загальний вміст фенольних сполук (32,5 мг GAE/г) забезпечує антиоксидантну активність 48,2% (DPPH). Амарантове борошно рекомендується як самодостатній структуроутворюючий агент для безглютенових харчових систем без додавання екзогенних гідроколоїдів.
