Abstract

Робота присвячена обґрунтуванню практичних заходів з удосконалення організації обслуговування в ресторані при готелі. Актуальність дослідження зумовлена тим, що ресторанний підрозділ готелю формує значну частину гостьового досвіду, впливає на сприйняття цінності проживання, повторні візити, якість room service, конференц-кейтеринг і загальний цикл гостинності. У роботі використано системний підхід, порівняльний аналіз, SWOT- і PEST-аналіз, конкурентне профілювання, оцінювання показників якості обслуговування та прогнозування очікуваного ефекту управлінських рішень. Встановлено, що ресторан при готелі працює в умовах відновлення ділової активності Києва, зміни очікувань гостей, кадрового дефіциту, інфляційного тиску та потреби у впровадженні цифрових і сталих сервісних технологій. Визначено переваги ресторану: технічне оснащення, кваліфікований персонал, збалансоване співвідношення ціни та якості, можливість організації банкетного й подієвого обслуговування. До проблем віднесено високу плинність персоналу, відсутність кадрового резерву, потребу в підвищенні швидкості окремих сервісних операцій і значні трудові та організаційні витрати. Запропоновано програму вдосконалення, що охоплює QR-меню та цифрове замовлення з інтеграцією в POS-систему, AI-аналітику F&B для контролю списань і виробничого планування, сезонне локальне меню, навчання й мотивацію персоналу, гастрономічні події, цифровий маркетинг і комунікації лояльності. Очікуваний ефект полягає у зростанні доходу, підвищенні чистого прибутку, збільшенні середнього чека, поліпшенні оборотності столів, скороченні харчових списань, підвищенні задоволеності гостей і зменшенні плинності персоналу.
The paper substantiates practical measures for improving service organization in a hotel restaurant. The relevance of the study is determined by the fact that the restaurant unit of a hotel forms a significant part of the guest experience, affects the perceived value of the stay, repeat visits, room service, conference catering and the overall hospitality cycle. The research is based on a systemic approach, comparative analysis, SWOT and PEST analysis, competitive profiling, assessment of service quality indicators and forecasting of the expected effect of managerial decisions. The study establishes that a hotel restaurant operates under conditions of business activity recovery in Kyiv, changing guest expectations, staff shortages, inflationary pressure and the need to introduce digital and sustainable service technologies. The main advantages of the restaurant are technical equipment, qualified staff, a balanced price-quality ratio and the capacity to provide banquet and event services. The identified weaknesses include high staff turnover, the absence of a personnel reserve, the need to improve the speed of some service operations, and significant labour and organisational costs. The proposed improvement programme includes QR menus and digital ordering integrated with the POS system, AI-based F&B analytics for monitoring food waste and production planning, a seasonal local menu, staff training and motivation, gastronomic events, digital marketing and loyalty communication. The expected effect includes revenue growth, higher net profit, an increase in the average check, improved table turnover, reduced food write-offs, higher guest satisfaction and lower staff turnover.
