Значення та перспективи використання безглютенових виробів

Abstract

Дослідження присвячене ролі безглютенового харчування у забезпеченні здоров’я дітей та людей із целіакією і непереносимістю глютену. Проаналізовано сучасні тенденції розвитку ринку безглютенових продуктів, їх значення для профілактики та корекції харчування, а також можливості використання альтернативних видів борошна й готових виробів у дитячому раціоні. Встановлено, що безглютенові продукти сприяють розширенню асортименту безпечного харчування, підвищують якість життя споживачів та стимулюють розвиток інноваційних технологій у харчовій промисловості та ресторанному господарстві.The study is devoted to the role of gluten-free nutrition in ensuring the health of children and people with celiac disease and gluten intolerance. The current trends in the development of the gluten-free products market, their importance for prevention and correction of nutrition, as well as the possibilities of using alternative types of flour and ready-made products in children's diets are analyzed. It was established that gluten-free products contribute to expanding the range of safe food, improve the quality of life of consumers and stimulate the development of innovative technologies in the food industry and restaurant industry.
