Territorial Diets as Models for Sustainable Nutrition and Restaurant Innovations

Abstract

This paper analyses four key territorial dietary models (Mediterranean, Japanese, traditional Nordic, and New Nordic diets) and explores their scientifically proven impacts on human health and environmental sustainability. It identifies innovative tools for integrating these concepts into the restaurant industry, such as placing plant-based components at the centre of the plate, utilising seasonal local products, fermentation, and gentle cooking techniques. The study demonstrates that adapting flexible frameworks for territorial diets enables HoReCa enterprises to create authentic menus with high added value, thereby underpinning the vision of a «restaurant of the future». У тезах проаналізовано чотири ключові територіальні моделі харчування (середземноморську, японську, традиційну та нову нордичну дієти) з погляду їхнього впливу на здоров'я людини та екологічну сталість. Визначено інноваційні інструменти інтеграції цих концепцій у ресторанний бізнес, такі як зміщення акценту на рослинні компоненти, використання локальних сезонних продуктів, ферментація та методи кулінарного оброблення. Доведено, що адаптація гнучких принципів територіальних дієт дозволяє закладам HoReCa створювати автентичні меню з високою доданою вартістю та формувати концепцію «ресторану майбутнього».
