Abstract
The effect of four types of natural berry jams (sea buckthorn, lemon-ginger, lingonberry, and apple) as functional enrichers on the nutritional and biological value of glazed curd cheese bars was investigated. Sea buckthorn jam was found to have the highest vitamin C content (563.18 mg/100 g) and β-carotene content (1768.87 μg/100 g) among the studied samples. The use of 5% fat curd cheese as the base was shown to provide a sensory score of 4.8 points, which was 14% higher than that of 0.6% fat curd cheese (4.2 points; p<0.05). Simplex-lattice Scheffé designs for three component systems and a D-optimal design for two-component systems were applied to optimize the formulation compositions. Regression models describing the dependence of vitamin C content, β-carotene content, titratable acidity, and sensory score on the ratio of filling components were developed. For glazed curd cheese bars with chocolate coating, the optimal ratio of sea buckthorn to lemon-ginger jam was determined to be 1:0.6, providing a vitamin C content of 202.75 mg/100 g, β-carotene of 156.87 μg/100 g, and titratable acidity of 1.57%. For bars with protein coating, the optimal ratio of lemon-ginger, lingonberry, and sea buckthorn jams was found to be 0.11:0.35:0.54 (vitamin C — 46 mg/100 g, β-carotene — 60.65 μg/100 g, titratable acidity — 1.55%, sensory score — 37 points). A formulation combining sea buckthorn, lemon-ginger, and apple jams in a ratio of 0.5:0.35:0.15 provided the maximum vitamin C content of 215.7 mg/100 g, which was 3.1 times the daily requirement when consuming 100 g of product. Replacing chocolate coating with protein coating reduced the caloric value of the product by 40 kcal/100 g (from 285 to 245 kcal/100 g). All quality indicators of the developed samples complied with the requirements of the current standard for glazed curd cheese.
