Abstract
Досліджено технологію безглютенових мафінів зниженої калорійності для ресторанів на основі суміші гречаного (30%), вівсяного (35%) та рисового (35%) борошна. Для оптимізації нутрієнтного складу в тісто вносили до 6% яблучного, гарбузового або бананового пюре. Експерименти на базі НУХТ підтвердили, що така модифікація знижує енергетичну цінність виробів на 12–16% та зменшує їх глікемічне навантаження. Вміст харчових волокон зріс удвічі (до 4,2–4,8 г/100 г), що покриває до 19% добової потреби. Мафіни мають високі органолептичні показники, правильну пористість і збагачені вітаміном С, калієм, магнієм та фосфором.
The study examines the technology of low-calorie gluten-free muffins for restaurants based on a blend of buckwheat (30%), oat (35%), and rice (35%) flours. To optimize the nutrient profile, up to 6% of apple, pumpkin, or banana puree was added to the batter. Experiments at NUFT confirmed that this modification reduces the energy value by 12–16% and lowers the glycemic load. The dietary fiber content doubled (up to 4.2–4.8 g/100 g), meeting up to 19% of the daily requirement. The muffins exhibit high organoleptic quality, proper porosity, and are enriched with vitamin C, potassium, magnesium, and phosphorus.
