Current state of the domestic agricultural industry for craftsmanship production

Abstract

The current state of agricultural raw material cultivation in Ukraine determines the potential and competitiveness of craft production for HoReCa. The development of niche agriculture, the growth of the number of small farms, the spread of organic production and the formation of direct supply chains create conditions for the production of authentic local products with a transparent composition. The prospect of further research is the analysis of regional production clusters and the development of models of cooperation between farmers and craft processors in the face of modern challenges.Сучасний стан вирощування сільськогосподарської сировини в Україні визначає потенціал та конкурентоспроможність крафтового виробництва для HoReCa. Розвиток нішевого сільського господарства, зростання кількості малих фермерських господарств, поширення органічного виробництва та формування прямих ланцюгів поставок створюють умови для виробництва автентичної локальної продукції з прозорим складом. Перспективою подальших досліджень є аналіз регіональних виробничих кластерів та розробка моделей співпраці між фермерами та крафтовими переробниками в умовах сучасних викликів.
