Abstract
Робота присвячена розробленню триетапного алгоритму підготовки заморожених кулінарних виробів до фуд-фотосесій (передзйомний, зйомний і післязйомний етапи) з регламентацією технологічних і композиційних операцій. На прикладі замороженого вінегрету як багатокомпонентної овочевої системи показано застосовність алгоритму: контроль ΔE* для компонентів і обмеження drip loss дають змогу виявляти відхилення на технологічному рівні, а не маскувати їх у кадрі. Плоска викладка зберігає впізнаваність компонентів, ретуш у межах ΔE* оригіналу забезпечує відповідність між зображенням і реальним сенсорним досвідом споживача. Алгоритм може використовуватися як елемент стандартизації якості бренду та інструмент комерційної комунікації заморожених страв.
The study proposes a three-stage algorithm for the preparation of frozen culinary products for food photography sessions (pre-shooting, shooting and post-shooting stages) with regulated technological and compositional operations. Applied to frozen vinaigrette as a multi-component vegetable system, the algorithm enables control of ΔE* for individual components and limits drip loss, allowing deviations to be detected at the technological level rather than masked in the frame. The flat-lay arrangement preserves component recognisability, and retouching within ΔE* limits of the original ensures consistency between the image and the actual sensory experience of the consumer. The algorithm can serve as an element of brand quality standardisation and as a commercial communication tool for frozen meals.
