Контроль виробництва м’ясних напівфабрикатів на Allfein Feinkost GMBH & CO. KG

Abstract

У роботі досліджено порядок організації контролю виробництва м’ясних напівфабрикатів на прикладі німецької компанії Allfein Feinkost GmbH & Co. KG відповідно до стандартів ISO 22000:2018 та ISO 9001:2015. Визначено ключову роль експерта в системі управління якістю та безпечністю, а також детально описано його обов'язки на всіх етапах технологічного процесу: від приймання та розморожування сировини до контролю калібрування, температурних режимів смаження в зоні високого ризику, виявлення металодомішок та перевірки маркування готової продукції. Обґрунтовано значущість професійних компетентностей експерта для запобігання браку та забезпечення випуску безпечних харчових продуктів. The paper investigates the organization of production control for meat semi-finished products using the example of the German company Allfein Feinkost GmbH & Co. KG in compliance with ISO 22000:2018 and ISO 9001:2015 standards. The key role of an expert within the safety and quality management system is defined, and their responsibilities across all stages of the technological process are described in detail: from the acceptance and thawing of raw materials to the control of calibration, frying temperature regimes in high-risk zones, metal contamination detection, and checking finished product labeling. The significance of the expert's professional competencies in preventing defects and ensuring the production of safe food products is substantiated.
