Abstract
Biosynthesised selenium nanoparticles (SeNPs) demonstrate pronounced antimicrobial and antifungal activity against a wide range of food pathogens and microorganisms causing spoilage of products. Using SeNPs in food technologies allows reducing the level of contamination of Escherichia coli, Listeria monocy-togenes, Salmonella spp., Staphylococcus aureus, Aspergillus spp., Fusarium spp. and Penicillium spp. in various types of food products. Using SeNPs in edible coatings extends the shelf life of fruits and vegetables by an average of 20—40%, reduces their mass loss by 15—30% and ensures the preservation of elasticity and attractive appearance of fruits for a long time. The effectiveness of the action of nanoparticles was deter-mined by the method of their biosynthesis, size, morphology and surface modification. Selenium nanoparticles with sizes of 3—50 nm, synthesised using microorganisms or plant extracts, had а high antimicrobial activity. The concentration of SeNPs in the range of 10—50 mg/l was sufficient to inhibit most gram-positive and gram-negative bacteria without significantly impac-ting the sensoryc properties of food products and their safety for consumers. Integration of SeNPs into polymeric packaging ma-terials helped reduce the rate of oxidative processes, slow the accumulation of peroxides and preserve natural antioxidants in products. These things prevent their spoilage and loss of nutriti-onal value during storage. The obtained results indicate a high potential for using bio-synthesised selenium nanoparticles as a safe and effective alter-native to synthetic preservatives and chemical fungicides. Their use contributes to increasing microbiological safety, reducing food losses and developing environmentally friendly technologi-es for storing and packaging food products. At the same time, the practical implementation of SeNPs in the food industry requires considering regulatory aspects. In the European Union, using nanomaterials, specifically selenium na-noparticles, is subject to special requirements for safety, migra-tion analysis and toxicological assessment. This requires harmo-nisation of scientific research with EU legislative regulations and further improvement of methods for assessing the safety of their use.
