Технологічні трансформації в харчовій промисловості: від автоматизації до здорового харчування

Abstract

У дослідженні узагальнено сучасні тенденції та стратегічні вектори розвитку підприємств харчової промисловості в умовах ринкової нестабільності, цифровізації та трансформації споживчих переваг. На основі системного підходу оцінено вплив автоматизації виробничих процесів та інтеграції технологій Інтернету речей (IoT) на мінімізацію людського фактора, зниження собівартості й оптимізацію віддачі основного капіталу. Проаналізовано ретроспективну динаміку світового попиту на органічну продукцію та масштабів використання біорозкладного пакування, що підтверджує перехід галузі до парадигми сталого споживання. Особливу увагу приділено механізмам жорсткого контролю безпечності продуктів на базі блокчейн-технологій та досвіду впровадження екологічних бізнес-моделей вітчизняними виробниками (зокрема, ТОВ «Органік Експерт»). Доведено, що поєднання технологічних інновацій із гнучкими цифровими каналами взаємодії з клієнтами забезпечує проактивний характер управління, підвищує лояльність споживачів та зміцнює довгострокову результативність бізнесу. Зроблено висновок про необхідність інтенсифікації інвестицій у наукомісткі рішення для формування стійкого економічного щита підприємств у конкурентному середовищі.This study generalizes the contemporary trends and strategic development vectors of food industry enterprises under conditions of market instability, digitalization, and transforming consumer preferences. Utilizing a systematic approach, the paper evaluates the impact of manufacturing process automation and the integration of Internet of Things (IoT) technologies on minimizing the human factor, reducing prime costs, and optimizing fixed asset turnover. The retrospective dynamics of global demand for organic products and the scale of biodegradable packaging utilization are analyzed, confirming the industry's transition toward the sustainable consumption paradigm. Special attention is paid to the mechanisms of rigid food safety control based on blockchain technologies and the experience of implementing eco-oriented business models by domestic producers (notably, LLC "Organic Expert"). It is demonstrated that synthesizing technological innovations with flexible digital customer interaction channels ensures a proactive management character, enhances consumer loyalty, and strengthens long-term business performance.
