Abstract
The study examines the formulation and manufacturing technology of a functional cereal bar enhanced with maitake mushroom (Grifola frondosa) extract. At NUFT, a three-component "extract-inulin-pectin" system was developed to design a stable rheological matrix. The optimal ingredient dosage per 50 g portion was established at 2.0 g of maitake extract, 1.5 g of inulin, and 0.4 g of apple pectin. Utilizing a water-polyol binding phase based on maltitol syrup resulted in a 45% reduction in added sugars. Profile sensory analysis confirmed the high organoleptic properties of the bar (9.1 out of 10 points), while the low water activity microbiological stability for up to 9 months. The product qualifies for "Source of dietary fiber" and "With no added sucrose" claims.
