No solanines were detected in the studied sample, the content of heavy metals was within the limit of permissible concentration, and the content of nitrates was within the critical limit. Описано можливість використання картопляної мезги як сировинного інгредієнта у харчовій промисловості, доведена доцільність контролю не лише безпечності картоплі, яку використовують для виробництва крохмалю, а й їх відходи – мезгу.
