Показано динаміку вирощування зерна по регіонам України на протязі 2009-2013 років. Проведений аналіз розподілу зерна пшениці по групам і класам якості, за вмістом вологи, клейковини і протеїну в зерні і борошні, числу падіння, вмісту домішок, пошкодження клопом-черепашкою. Зроблений аналіз динаміки виробництва і експорту борошна в Україні на протязі 2003-2014 років. Наведено перелік найбільших борошномельних заводів України з їх річною переробкою зерна. Приведена принципова схема введення і дозування мікро- і макроелементів в готову продукцію. In materials of a forum results of the analysis of quality of a flour and grain of Ukraine and the Black Sea region are resulted. Dynamics of cultivation of grain on regions of Ukraine during 2009-2013 is shown. The analysis of distribution of grain of wheat on groups and classes of quality, on moisture contents, gluten both a protein in grain and a flour, to number of falling and the maintenance of impurity, damages by a bug-damage is lead. The analysis of dynamics of manufacture and export of a flour in Ukraine during 2003-2014 is made. It is resulted the list of the greatest flour-grinding enterprises of Ukraine with their annual processing grain.
