dc.description.abstractThe process of extraction of pectin-containing raw materials under various factors of temperature, duration, hydromodule using the vibration mixing medium was investigated. The extracts obtained from apples and pumpkin are offered for use in the production of milk drinks, since whey was used as an extractant. Досліджено процес екстрагування пектиновмістної сировини при різних факторах температури, тривалості, гідромодулі з використанням вібраційного перемішування середовища. Отримані екстракти з яблук та гарбуза пропонується використовувати для виробництва молочних напоїв, адже в якості екстрагента використовувалась молочна сироватка.uk_UA
