dc.description.abstractУ статті обґрунтовано доцільність збагачення хліба залізом. Представлено результати досліджень впливу носіїв заліза на технологічний процес виробництва хлібобулочних виробів. Клінічними спостереженнями доведено фізіологічну ефективність обраних носіїв заліза у складі хлібобулочних виробів. The article is devoted to the development of technologies of functional bakery products, enriched with iron. According to literary data, the necessity for the enrichment of bread easily dispectible iron and elected carriers of iron. With the help of calculations defined optimum dosages may elect carriers of iron (ferrous lactate, iron sulfate, dietary Supplement hemic iron "Hemovital") to cover the daily needs in iron by 50%. The effect of carriers of iron on the activity of fermentation for the dynamics of change of oxide-reduction potential of the test. Established changes in the course of proteolytic processes in the samples of the test with the carriers of iron and the impact of these changes on the structural-mechanical properties of gluten. Presented data on the ratio of the valence forms of iron in the dough and bread. Physiological effectiveness of carriers of iron in the structure of bakery products is proven by clinical observations.uk_UK
