Розроблення способів дезінфекції та підготовки живильної води для екстрагування сахарози з бурякової стружки

Abstract

The dissertation for obtaining of scientific degree of Candidate of the Technical Sciences on the speciality 05.18.05 – technology of sugary substances and fermentation products. –National University of Food Technologies, Kiev, 2008. The work is devoted to the actual question of improvement of extracting of saccharose from the beet shaving, improvement of technological quality of the diffusion juice, rising of output of sugar, reduction of losses of saccharose from microbiological decomposition during extracting of saccharose from the beet shaving. On the basis of the experimental researches there are many developed methods of application of following preparations: “Gavel-cleyd” (active chlorine); “Biodez”, “Polidez” (polyhexamethylene guanidine hydrochloride); “Biovit” (forage to the antibiotic the chlorine of tetratsiclinou) during extracting. The method of preparation of nourishing water is developed and applied in industry for the process of extracting of saccharose from beet with the use of basis sulfate of aluminium (patent Ukraine № 58320). The use of basis sulfate of aluminium allows to get diffusive juices of high quality and multiplies the output of sugar.

Робота присвячена актуальному питанню вдосконалення вилучення сахарози з бурякової стружки, покращення технологічної якості дифузійного соку, підвищення виходу цукру, зменшення втрат сахарози при мікробіологічному розкладі під час вилучення сахарози з бурякової стружки.
