dc.description.abstractУ статті досліджено стан виробництва хліба та хлібобулочних виробів в Україні протягом 2016–2018 років. Оскільки ринок хліба розвивається, розширює свій асортимент і з’являються нові проблеми з його розвитком, потрібно постійно аналізувати зміни в усіх аспектах виробництва хлібопекарської галузі. Було проведено порівняльний аналіз обсягів реалізації хлібобулочних виробів, витрат на виробництво продукції, зміни кількості підприємств хлібопекарської галузі, зміни чисельності працівників. Виявлено основних учасників ринку та з них виділено лідерів на ринку хлібобулочних виробів у досліджуваному періоді. Проведено розподіл виробників-конкурентів на три стратегічні групи відповідно до обсягів виробництва та виробничих потужностей. Встановлено, що попит на продукцію зменшився, конкуренція між підприємствами зросла, плинність кадрів також зросла. За допомогою проведеного дослідження виявлено зниження ефективності роботи підприємств хлібопекарської галузі та його причини. The article researches the state of production of bread and bakery products in Ukraine for 2016–2018 years. This topic is relevant because bakery products are daily in the diet of all categories of the population of Ukraine and are designed to satisfy physiological needs. It can be considered that the bakery industry is strategically important for ensuring food security of our country. The main purpose of the article is to analyze the production of bread and bakery products in all possible parts of the accounting of this industry. As the bread market develops, expands its range and appears a new problems with its development, it is necessary to constantly analyze changes in all aspects of the bakery industry. A comparative analysis of the volume of sales of bakery products, production costs, changes in the number of enterprises in the bakery industry, changes in the number of employees was conducted. The peculiarity of the market of bread and bakery products of Ukraine is almost one hundred percent supply of domestic products. The main market participants were identified and from them the leaders in the bakery market in the research period were detected. Sales networks are mostly located by region (city, district, region) with a delivery radius of up to 150 km. Therefore, the nature of competition is mainly local and interregional. The competitors are divided into three strategic groups according to production volumes and production capacities. It is established that the demand for products has decreased, competition between enterprises has increased, staff turnover has also increased. Enterprises engaged in production of bread and bakery products worked in quite difficult conditions in the research period. The research detected a decrease in the efficiency of the bakery industry and its causes. The analyze of the results of bakery enterprises shows that this industry needs government support to ensure further development. Also, it is necessary to seek a reserves and ways to increase the efficiency of bakery enterprises, considering the new trends that are emerging in the current conditions of Ukraine’s econom.uk_UA
