Удосконалення процесу адсорбційного очищення яблучного соку та його купажу

Abstract

Дисертація присвячена удосконаленню очищення яблучного соку та його купажу українськими природними адсорбентами. Підібрано ефективний адсорбент – палигорськіт. Досліджено процес його змочування яблучним соком. Отримано кінетичні залежності зміни концентрації пектинових речовин у соку і у палигорськіті, визначено коефіцієнт дифузії пектинових речовин в порах адсорбента. Dissertation is devoted to the improvement of the process of refining apple juice and its coupagou by natural domestic adsorbents. An effective and low-cost adsorbent, paligorskit, has been selected. The process of its moistening by apple juice has been explored. The kinetic dependences of changes in concentration of pectin substances in juice and in paligorskit have been obtained, coefficient of diffusion of pectin substances in the pores of the adsorbent have been determined.
