Abstract
Вдосконалено технологію молока згущеного термічно обробленого. Показано доцільність заміни вуглеводної частини на глюкозно-фруктозні сиропи. Наведені результати досліджень продуктів виго¬товлених за альтернативною технологією, яка передбачає використання вакуумвипарних установок.
It is improved manufacturing techniques ofcondensedtermaltuated milk. The prospect of replacement of sucrose on glukoze-fruktoze syrups and their influence on organoleleptic indicators of the condensed milk are shown. Results of analyses in a ready product which is made on alternative technology are repusented.
