Вторинні продукти переробки хеномелесу — джерело біологічно активних речовин

Abstract

У статті запропоновано шляхи переробки відходів хеномелесу. Проведено порівняльну характеристику фізико-хімічних показників і вмісту біологічно активних речовин відходів та плодів з хеномелесу. Визначено фракційний склад органічних кислот, цукрів і фенольних речовин, що містяться у вичавках хеномелесу. Досліджено використання напівфабрикатів з вичавок хеномелесу в технології продуктів харчування з метою покращення їх біологічної цінності, органолептичних і структурно-механічних властивостей. The use of secondary processed products of fruits and vegetables is suggested. The ways of waste recycling of chaenomeles are studied. The comparative characteristic of physical-chemical parameters and the content of biologically active substances of chaenomeles waste are defined. The fractional composition of organic acids, sugars and phenol snbstances, which are contained in the marc of chaenomeles, is determined. The use of semi-finished products from marc of chaenomeles in food technology for improving the biological value, organoleptic and structural and mechanical properties of food products is investigated.
