Abstract

In providing the country's population with products for healthy nutrition, fruits, berries and vegetables occupy a special place. However, these products are seasonal and have low storage stability, so it is necessary to develop and improve technologies for their preservation, primarily using artificial cold in all its modifications and application options. Many years of world scientific and practical experience have shown that low-temperature preservation is a unique way to preserve the nutritional and biological value of plant raw materials and products based on them during processing.
