dc.description.abstractExtremely urgent problem of mankind is the problem of the prevention of iodine deficiency. It causes severe thyroid disease - goiter, hypothyroidism, disrupting the formation and function of the central nervous system that manifests in the form of mental retardation, the cretinism in children, disorders of the reproductive system of women, the rejection in the brain in older people. The most effective way to eliminate the iodine deficiency disorders (IDD) – is iodized salt. However, to limit the IDD prevention of iodized table salt is inexpediently. This is due to the limited period of storage, the presence of trends in modern nutrition reduce salt intake by person, particularly by children, is also the possibility of an overdose of iodine, because it is contained in salt in inorganic form. Recently, as an effective tool against iodine deficiency, use Lamidan - the product of the Far Eastern laminarian algae, which are the main advantages of a balanced content of organically connected iodine and selenium - the necessary elements for the synthesis of thyroid hormones and enterosorbentive activity, which is caused by the presence of alginic acid. This product has been used by the authors in the recipes of numerous dairy products (cocktails, sauces) and pastille products to create the new food products for schoolchildren of iodine deficiency regions. The article contains consumable properties of these products and the results of their physiological effectiveness. Надзвичайно актуальною проблемою людства є проблема профілактики йодної недостатності. Останнє спричинює важкі хвороби щитовидної залози – зоб, гіпотиреоз, порушення процесу формування і функції центральної нервової системи, що проявляється у вигляді затримки розумового розвитку, кретинізму у дітей, порушення репродуктивної системи жінок, відхилення в роботі головного мозку у людей старшого віку. Найбільш дієвий шлях до усунення йододефіцитних захворювань (ЙДЗ) – йодування солі. Разом з тим, обмежити профілактику ЙДЗ йодовуванням кухонною сіллю недоцільно. Це зумовлено обмеженим терміном її зберігання, наявністю в сучасній дієтології тенденцій зниження споживання солі людиною, зокрема дітьми, також можливістю передозування йоду, оскільки в солі він міститься в неорганічній формі. Останнім часом, як ефективний засіб проти йододефіциту, використовують Ламідан – продукт із далекосхідних ламінарієвих водоростей, головними достоїнствами якого є збалансований вміст органічно зв’язаних йоду і селену – елементів необхідних для синтезу гормонів щитоподібної залози та ентеросорбційна активність, яка зумовлена наявністю альгінових кислот. Саме цей продукт був використаний авторами в рецептурах низки молочних продуктів (коктейлів, соусів) та пастильних виробів для створення нових продуктів харчування школярів йододефіцитних регіонів. В статті наведені споживні властивості цих продуктів та результати їх фізіологічної ефективності.uk_UA
