Анотація
Розглянуто структуру виробництва міцних алкогольних напоїв у світі та Україні, їх асортимент та напрями розвитку розширення асортименту. Вивчено технологію отримання горілки особливої на основі стевії шляхом використання її концентрату.
In the work analytical studies of alcoholic beverages market state are
presented. The structure of is represented predominantly by the
production of vodka (20 % of world production). According to
statistical data the use of liker and vodka production on the average
comprises, liters per year: Russians — 15, Kazakhs — 12 - 15,
Belorussians — 10-11, Ukrainians — 6 - 9 .
The Ukrainian market for vodka today is practically structured and
according to. State tax administration data, its production is
accomplished by 56 objects. According to concern «Ukrspirt» data
the structure of realization by the producers of alcohol ethyl of
that rectified in 2010 is represented: vodka and liker and vodka
articles — 81 - 95 %, wine-making production — 3,5 - 15 %,
medicines — 1 - 2 , 5 %, other production — 0,5 - 1,5 %.
As statistical data show, domestic producers completely satisfy the
needs of the inhabitants of our country. However, for in the demand
increase, a work on the improvement of the assortment of production
is constantly carried out by producers. Thus, in the production of
alcoholic beverages began to use more aromatized alcohols, liqueurs,
finit juices and juices on the alcohol basis. In their production the
natural raw material is used: red pepper, materinka, ekhinatseya,
leaves of black currant and cherries, the lobes of rose, fruits of
hawthorn, sweetbrier, currants and guilders rose, cinnamon, paprika,
and others. Recently for the improvement of organoleptic properties
of vodka they began to use aromatized alcohol obtained on the basis
of stevia. Stevia is noted for its rich component mix, which is
determined by low-calorie and ecological- protector properties. We
developed the method of obtaining special vodka on the basis of
obtained concentrate from stevia leaves. This method is considerably
simpler and makes it possible to obtain product with good
organoleptic indices.
