Abstract
У статті наведено результати дослідження, присвяченого розробці інноваційної технології холодних солодких страв підвищеної якості дієтичного та функціонального призначення на прикладі збивних кремів із додаванням рослинних порошків буряку та чорниці як природних джерел біологічно активних сполук. Актуальність роботи зумовлена необхідністю розширення асортименту дієтичної продукції з підвищеною харчовою та біологічною цінністю, а також пошуком ефективних технологічних рішень, що забезпечують стабільні реологічні та високі сенсорні властивості готових виробів відповідно до сучасних концепцій нутріціології, профілактичного харчування та функціонального продуктового дизайну.
The article presents the results of a study devoted to the development of an innovative technology for cold sweet dishes of increased quality for dietary and functional purposes using the example of whipped creams with the addition of beetroot and blueberry plant powders as natural sources of biologically active compounds. The relevance of the work is due to the need to expand the range of dietary products with increased nutritional and biological value, as well as the search for effective technological solutions that ensure stable rheological and high sensory properties of finished products in accordance with modern concepts of nutrilogy, preventive nutrition and functional product design.
