dc.description.abstractThe paper presents the results of research and scientific substantiation of nutritional and biological value of developed new mushroom chips and snacks. To achieve this goal, the task was to investigate experimentally the chemical and amino acid composition, digestion of protein substances of developed chips and snacks based on edible mushrooms. The research was conducted using modern methods. On the basis of experimental researches, the increased consumer and biological value of the developed mushroom products, and also their low caloric content was proved.
dc.description.abstractВ статті наведені результати досліджень та наукового обґрунтування харчової та біологічної цінності розроблених нових видів грибних чіпсів та снеків. Для досягнення мети були поставлені завдання експериментально дослідити хімічний та амінокислотний склад, перетравлення білкових речовин розроблених чіпсів та снеків на основі їстівних грибів. Дослідження проводили із застосуванням сучасних методів. На основі експериментальних досліджень доведено підвищену харчову та біологічну цінності розроблених грибних продуктів, а також їх невисоку калорійність.
