Abstract

Food additives is occupied an important place in the food industry. The most common stabilizing additives for the meat industry are plant and animal origin protein preparations and hydrocolloids. Nevertheless, complex additives are used more often instead of individual ones. The article shows the research conducted to determine the effective viscosity of established functional food formulations. It is composed of plant and animal origin protein preparation and mix of hydrocolloids. The improvement of rheological properties by introducing a nanocomposite was proved in the presented results.
