| Abstract: | Піднімається питання дослідження змін білкового компоненту під час термовологообробки. Наведені основні причини підвищення біологічної цінності білка як наслідок термічної обробки. Показано важливість регулювання даним процесом. The article deals with question of research of changes protein components during thermal-moisture treatment. Presented the main reasons for increasing the biological value of protein as a result of heat treatment. It is shown the importance of regulating of this process. |
