The existing structure of consumption of ethanol in the domestic market, when the lion's share of ethanol is used to produce alcoholic beverages, together with the actual monopolization of pricing policies, have led to the fact that spirits can produce significantly more volumes of ethanol than the market needs, while exports make high ethanol prices impossible. When considering the effectiveness of the introduction of new technological and technical solutions, almost never paid attention to their impact on the cost of finished products. So, domestic alcoholic beverages are capable of producing high quality rectified ethanol, but the need for it both within the country and in the world is limited. The main volumes of alcohol sales on world markets are formed at the expense of bioethanol and technical ethanol (ethanol for technical needs). At the same time, prices for them are formed taking into account competition with products of the same purpose, offered by producers of other branches of the economy. The authors propose a technology for rectification, which involves the cyclic motion of the liquid without interrupting of the supply of heating steam and the construction of a rectification column for its implementation. The purpose of the work was to research the effectiveness of the proposed technology in the process of rectification of alcohol-containing fractions and to establish the specific flow rate of steam in the impurity concentration column. The investigations were carried out in the production conditions of the Chudniv branch of SE “Zhytomyr liquor producer ”. To ensure a cyclic mode, the column was equipped with movable liquid transfer devices connected to actuating mechanismes, which acted according to the controller program, and perforated (scale-shaped) trays. The primary task was to determine the hydrodynamic mode of operation of the contact devices - the lower and upper the critical vapor velocity of at which the liquid is retained on the plates and there is its entrainment. It is established that the vapor velocity in the free section of the column can reach 1.2 m/s or more, and in the openings of the scales must exceed the first critical velocity of 6.5-7.5 m/s. The weeping of the tray occurs at the vapor velocity in the holes of 1.5-1 m/s. It is experimentally proved that in the process of rectification of alcohol-containing fractions, the main impurities are removed completely, the degree of extraction of higher fusel alcohols is increased by 38%, methanol - by 15.6%, the multiplicity of concentration of the main impurities is increased by 25%, the higher alcohols - by 40%, methanol – by 34%, acrolein – by 36%. The costs of heating steam are reduced by 30% compared to typical installations and do not exceed 13 kg / dal of absolute alcohol introduced with feed. The construction of distillation column allows to manage the cycles delay and the liquid overflowing by predetermined algorithm. The design of scaly plates is offered. It allows to increase the intensity of the mass transfer process of volatile liquid and steam components. The expediency of using an innovative technology in production environment is proved. Experimental column with a diameter of 650 mm was equipped with 30 scaly plates with distance of 400 mm and movable valves mounted on rods connected with the cylinders DNT 63-50-PPV-A FESTO. Rods was set in motion in accordance with the controller program. Were used applied contact devices with coaxial arrangement of the arched type scales, with the help of which the principle of gas-liquid jets collision was realized. Founded, that using of the proposed technology allows to optimize the process of alcohol distillation of alcoholic distillate by reducing the specific consumption of heating steam by 35 % compared to a typical distillation columns and the increasing of ethanol concentration in the distillate by 28...30 % with the normative losses of alcohol with stillage. If you increase the interval delay of the mash on the plates of the column more than 12 sec. the specific consumption of heating steam and the alcohol concentration in the distillate is rising insignificantly. This causes the decreasing of column liquid throughput. Research methods - analytical, chemical, physico-chemical with the use of instruments and research methods used in the production of rectified ethyl alcohol. Fluid consumption was controlled with the help of flowmeter RM, air velocity in the free section of the column - anemometer MS-13, in the holes of the plates - by calculation method. The concentration of volatile impurities of alcohol was determined on a gas chromatograph with a column HP FFAP 50 m × 0.32 m. Analysis of research samples was performed according to the State Standard of Ukraine 4222:2003 "Vodka, ethyl alcohol and water-alcohol solutions. Gas chromatographic method for determination of microcomponents content". An energy-saving technology of cyclic rectification with a continuous supply of heating steam and liquid to a mass-exchange column apparatus equipped with flake plates is proposed. The innovative method allows to prolong the time of contact of steam and liquid on plates up to 40-60 s and to reduce the time of overflow up to 1-1,7 s. The studies were carried out in a rectification column, equipped with flaky plates with a variable free cross-section. Concentration of alcohol volatile impurities was determined by chromatographic method, the grade of their extraction and concentration ratio – by calculation method, other indicators – by commonly known methods. The maximum extraction of volatile impurities was being achieved in a rectification column, equipped with flaky plates containing turnaround sections connected to drive mechanisms, the action of which is occurred according to a given algorithm. The optimal parameters of operating the column were: vapor velocity in the orifices of the flakes during the period of liquid retention on the plates 12-14 m/s; during liquid pouring 1-1.5 m/s; time of residence of the liquid on the plates 40 s, pouring time 1.7 s; pressure in the lower part of the column 12 kPa; the concentration of ethyl alcohol in the still liquid 3-4% vol. In order to provide the cycles, the free sectional area of the plates must change instantaneously from 5.5 to 51.7%. There was studied the influence of nanoparticles of metals on hydrolysis of biopolymers of the raw material and biosynthesis of organic compounds at wort fermentation. It was experimentally established, that the most positive influence of biosynthetic properties of yeast cells is realized by zinc and magnesium. At using zinc and magnesium, yeast biomass and alcohol content in mashes increase. Best chemical-technological indices of mashes were received at adding nanoparticles of zinc and magnesium at the stage of batch dilution.There was experimentally studied the synthesis of volatile organic admixtures in marsh distillates depending on point of adding nanoparticles of metals. Теоретично обґрунтовано та експериментально підтверджено доцільність збагачення високонцентрованого сусла із крохмалевмісної сировини додатковим джерелом мінерального живлення для дріжджових клітин, в якості наночастинок металів. Досліджено вплив наночастинок металів на гідроліз біополімерів сировини та біосинтез органічних сполук при зброджуванні сусла. Експериментально встановлено, що найбільш позитивний вплив на біосинтетичні властивості дріжджових клітин має цинк та магній. При застосуванні цинку та магнію біомаса дріжджів та вміст спирту в бражках зростає. It is proved that the addition of metal nanoparticles in ionic form and should be carried out cyclically at a ratio of 2-3 cycles of metal, and as much without metals.Thus, based on the studies identified the optimal concentration of nitrogen and mineral nutrition by culturing yeast to obtain a large number of physiologically active yeast for fermentation of wort of high concentrations. Для культивування дріжджів використовували расу дріжджів Saccharomyces cerevisiae ДО-11, сусло із кукурудзи концентрацією 20 і 26 % СР, концентрацію амінного азоту коригували шляхом внесення в сусло амінокислоти гліцин та карбаміду. Використання іонів цинку і магнію на стадії дріжджегенерування дозволило отримати засівні дріжджі з підвищеною фізіологічною в кількості до 500 млн/см3 та скоротити тривалість дріжджегенерування до 12 годин. Доведено, що додавання металів у нано- та іонній формі потрібно проводити циклічно у співвідношенні 2-3 цикли з металами, та стільки ж без металів. Розглянуто способи та основні фільтрувальні матеріали, які використовуються у технології горілок, визначено вплив природних модифікованих мінералів на ефективність очищення сортівок та якість горілок. Викладено методи визначання фізико-хімічних показників, катіонно-аніонного складу сортівки, спосіб модифікації природного обсидіану та природного цеоліту клиноптилоліту. У роботі наведено основні одиничні питомі витрати розчину соляної кислоти для видалення з поверхні зольних елементів та вапнякових включень, води питної та підготовленої для промивки матеріалу, водно-спиртової суміші до встановлення рівноважного значення міцності для запобігання розбавлення сортівки. Показано вплив модифікованих природних матеріалів на фізико-хімічні показники і катіонно-аніонний склад сортівки до та після її очищення модифікованими обсидіаном та клиноптилолітом у порівнянні з кварцевим піском. Доведено досягнення позитивного ефекту очищення та покращення прозорості сортівки у технології фільтрування модифікованими природними мінералами. Визначено прогнозовану стійкість за зміною фізико-хімічних показників сортівки після її витримки в критичних умовах і контрольним зразком та масивом запасу параметра до критичної межі. Встановлено, що фільтрування сортівки модифікованим обсидіаном дає змогу збільшити строк придатності до споживання на два місяці, модифікованим клиноптилолітом - на 4 місяці. Модифікування природних обсидіану та клиноптилодіту, за зменшених питомих витрат соляної кислоти та підготовленої води на стадії підготовки до основного циклу, сприяє підвищенню ефективності фільтрування на 10-15% та дозволяє отримати горілку з вищою на 0,1-0,2 одиниці прозорістю та покращити її мікрокомпонентний склад. The aryticle presents the results of theoretical and experimental research on improving the technology of purification of water-alcohol mixture with natural modified minerals for the production of vodka. The methods and main filtering materials used in alcohol technology have been considered, the inefluence of natural efficiencies of modilification has been determined. Methods for determining physicochemical parameters, cationic-anionic composition of the sort, method of modification of natural obsidian and natural zeolite clinoptilolite are described. The paper presents the main unit specific costs of hydrochloric acid solution for removal from the surface of ash elements and limestone inclusions, drinking water and prepared for washing material, water-alcohol mixture to establish an equilibrium strength value to prevent dilution of the sort. The influence of modified natural materials on physicochemical parameters and cationic-anionic composition of sorting before and after its purification by modified obsidian and clinoptilolite in comparison with quartz sand is shown. Achieving a positive effect of cleaning and improving the transparency of sorting in the technology of filtration with modified natural minerals. The predicted resistance to changes in the physical and chemical parameters of the sorting after its aging in critical conditions and the control sample and the array of parameter stock to the critical limit is determined. It was found that filtering the sort with modified obsidian allows to increase the shelf life by two months, modified clinoptilolite - by 4 months.
