Abstract
Наведені результати досліджень гідратаційної здатності сировини, що багата на харчові волокна. Встановлено їх вплив на зміну органолептичних, фізико-хімічних, структурно-механічних властивостей помадних і кремово-збивних цукерок.
These are results of hidratation ability of raw materials rich in dietary fiber. It was established their influence to change the organoleptic, physical, chemical, structural and mechanical properties of fondant and whipped cream-candy.
