В статті показано негативний вплив на здоров’я людини канцерогенних речовин в продуктах харчування. Розглянуто питання утворення нітрозодиметиламіну під час теплових процесів у виробництві продуктів з топінамбура.
The paper shows the negative impact on human health carcinogenic substances in food. Questions nitrozodymetylaminu formation during thermal processes in the production of artichoke.
