Теплогідродинамічні процеси у плівкових випарних апаратах яблучного соку

Abstract

Дисертація присвячена дослідженню теплогідродинамічних процесів при концентруванні яблучного соку методом випаровування з нього води. Отримані результати вирішують важливу проблему створення випарних установок фруктових соків. The results, which we receive, solve the important problem of the evaporating plant fruit juices creation. The analysis of evaporating heat transfer technology and research to the pellicles of liquid from descending two-phase flows, experimental investigation of heat transfer and pressure losses during evaporation from the free surface and descending pellicle boiling apple juice in a vertical pipe and pellicle flows of apple juice on a vertical plate.
