Abstract
Розроблено композиції прянощів для їх використання у складі рецептур молочного морозива. Досліджено раціональні технологічні режими екстрагування прянощів. Встановлено вплив екстрактів прянощів на якісні показники морозива. Spice compositions for use in the formulation of milk ice cream have been developed. Rational technological regimes for extracting spices are investigated. The effect of spice extracts on the qualitative parameters of ice cream is established.
