Abstract

Сформульовано напрямок досліджень біотехнологічних процесів харчових виробництв як складних систем в умовах самоорганізованого структуроутворення. Визначені задачі досліджень з метою створення ефективних ресурсоощадних систем управління біотехнологічними процесами харчових виробництв з позицій синергетики. Direction of researches of biotechnological processes of food productions is formulated as difficult systems in the conditions of the organized gelation. Certain tasks of researches are with the purpose of creation of effective resursooschadnikh control system by biotechnological processes food productions from positions of synergetics.
