Ultrasonic processing of food products in compliance with the principles of labor safety as a direction of sustainable development of the food industry

Abstract

The work studies and summarizes global, domestic and personal experience of the influence of ultrasound on the physicochemical properties of meat and dairy products, beverages, honey and dough. Attention is paid to the combination of ultrasonic processing of food products with compliance with the principles of labor safety, which is an important direction of sustainable development of the food industry.

У роботі вивчено та узагальнено світовий, вітчизняний та особистий досвід впливу ультразвуку на фізико-хімічні властивості м'ясних та молочних продуктів, напоїв, меду та тіста. Приділено увагу поєднанню ультразвукової обробки харчових продуктів з дотриманням принципів безпеки праці, що є важливим напрямком сталого розвитку харчової промисловості.
