Abstract

В зв’язку з кризовою ситуацією на ринку, що пов’язана із військовими діями та ускладненням можливостей експорту в Україні спостерігається перевиробництво фруктів та овочів, в т.ч. цибулі. Не вистачає сертифікованих складів та сховищ для зберігання. Тому, важливо шукати альтернативні та економічно вигідні способи перероблення плодово-овочевої сировини. Одним із них є сушіння.Due to the crisis situation on the market, which is associated with military actions and the complication of export opportunities in Ukraine, there is an overproduction of fruits and vegetables, including onions. There is a lack of certified warehouses and storage facilities. Therefore, it is important to look for alternative and economically profitable ways of processing fruit and vegetable raw materials. One of them is drying.
