Дослідження випаровування води з тканини гриба печериця звичайна в процесі сушіння

Abstract

У статті описано результати визначення стану води в тканинах плодового тіла гриба печериця звичайна різного ступеня зневоднення за допомогою сканувальної калориметрії та визначення теплоти випаровування вологи за допомогою синхронної калориметрії і термогравіметрії. The paper describes the results of determining the state of water in tissues of fruiting body of Champignon Campestris having varying degrees of dehydration by scanning calorimetry and determines the heat of moisture evaporation using synchronous calorimetry and thermogravimetry. Detailed description of the methodology and laboratory facilities used for investigation is presented in this paper.
