Abstract

За оцінками Всесвітньої організації охорони здоров'я, щорічно реєструється 600 мільйонів випадків захворювання, понад 420 000 смертей та 33 мільйони років життя, скоригованих з інвалідністю (DALY), пов'язані з харчовими отруєннями. Були розроблені політики та рекомендації щодо безпеки харчових продуктів для мінімізації ризиків забруднення, спричинених людською недбалістю. Традиційні методи мікробіологічної кількісної оцінки спираються на культивування патогенів на спеціалізованих середовищах, їх виділення та подальшу біохімічну ідентифікацію, яка зазвичай займає близько 5-7 днів, протягом яких патогени поширюються далі від джерела забруднення, що ускладнює ефективне управління ними. Розробка та впровадження швидких, простих, чутливих та видоспецифічних методів виявлення харчових патогенів є терміново необхідними в харчовій промисловості та установам охорони здоров'я, які прагнуть максимізувати здоров'я та безпеку споживачів. Молекулярні методи все частіше використовуються для діагностики класичних та вибагливих патогенів з моменту появи полімеразної ланцюгової реакції (ПЛР). The World Health Organization estimated that there are 600 million cases, over 420,000 deaths, and 33 million disability-adjusted life years (DALYs) annually associated with foodborne diseases. Food safety policies and guidelines have been developed to minimize contamination risks caused by human negligence.. Traditional microbiological quantification techniques rely on the culture of the pathogens on specialized media, their isolation, followed by biochemical identification, which generally takes about 5~7 days, during which time the pathogens are spreading further from the source of contamination making effective management of them difficult. The development and implementation of rapid, simple, sensitive, and species-specific methods for detecting foodborne pathogens is urgently needed in the food industry and by public health protection agencies that aim to maximize the health and safety of consumers. Molecular methods have been increasingly exploited to diagnose classic and fastidious pathogens, since the advent of the polymerase chain reaction (PCR).
