Research on the content of substances with antioxidant properties in black elderly fruits (Sambucus nigra)

Abstract

Наша країна багата на природні сировинні ресурси, які потенційно придатні для перероблення на оздоровчі продукти. Прикладом може буде дикоросла плодово-ягідна сировина, яка має надзвичайно цінний біохімічний склад з наявністю тих нутрієнтів, що належать до функціональних інгредієнтів. Плоди бузини чорної є високовітамінною сировиною, в якій також багато мінеральних сполук, органічних кислот, пектинів, антиоксидантів та барвних речовин. У роботі був визначений кількісний вміст фенольних сполук у дикорослих плодах бузини чорної, зібраних у Черкаській області у 2025 році. Встановлено, що понад 75% цих сполук міститься у шкірці плодів, близько 21% – у м’якоті плодів, а решта – у насінні. Схожою є і локалізація вмісту аскорбінової кислоти, за виключенням того, що у насінні ця речовина не була виявлена. При виробництві харчових продуктів оздоровчої дії можна використовувати не лише плоди бузини чорної, а й продукти її перероблення, зокрема вичавки, що отримані після відділення соку. Сік може бути основою безалкогольних оздоровчих напоїв, концентратів, бальзамів, а висушені та подрібнені вичавки доцільно додавати при виробництві борошняних кондитерських виробів, харчоконцентратів, злакових батончиків, смузі, сиркових десертів тощо. An example would be wild fruit and berry raw materials, which have an extremely valuable biochemical composition with the presence of those nutrients that belong to functional ingredients. Black elderberry fruits are a high-vitamin raw material, which is also rich in mineral compounds, organic acids, pectins, antioxidants and coloring substances. The work determined the quantitative content of phenolic compounds in wild black elderberry fruits collected in Cherkasy region in 2025. It was found that more than 75% of these compounds are contained in the skin of the fruits, about 21% in the pulp of the fruits, and the rest in the seeds. The localization of the content of ascorbic acid is similar, except that this substance was not detected in the seeds. In the production of health-promoting food products, not only black elderberry fruits can be used, but also its processing products, in particular, the pomace obtained after the juice is separated. The juice can be the basis of non-alcoholic health drinks, concentrates, balms, and dried and crushed pomace should be added in the production of flour confectionery, food concentrates, cereal bars, smoothies, cottage cheese desserts, etc.
