Abstract
В статті наведено дослідження фізико-хімічних властивостей крохмалів. Виявлено та досліджено релаксаційні і фазові переходи. Встановлено зв’язок між характеристиками різних видів крохмалів.
The article presents the research of the physico-chemical properties of starches. Found and studied relaxation and phase transitions. A connection is established between the characteristics of different types of starches.
