Композиційна суміш із нетрадиційної сировини для виробництва продуктів для військовослужбовців

Abstract

Однією з основних вимог до харчування військовослужбовців є відповідність його компонентного складу нутритивним потребам у складних умовах життєдіяльності. Особливу увагу необхідно приділяти білковій складовій, яка забезпечує різнобічний вплив на організм військовослужбовця. У роботі показано доцільність використання в якості джерел нетрадиційних білків зеленої маси лікарських рослин та коренеплідних культур при виробництві нових видів хліба. The authors of the article have shown the expedience of using the green mass of curative plants and the cultivated roots in production of the new sorts of bread. Therefore, the plantain leaves and green mass of red beet were chosen as the subjects for our studies. Using the methods of organoleptic, physicochemical and microbiological research, the authors have found out that the abilities of obtained powders (mineral content, amino acid amounts, amino acid score etc.) depend on the season of cropping (the best time is September). The protein component and the sufficient quantities of food cellulose are extremely important in a diet for military personnel. The green mass of curative plants and cultivated roots would become the new effective sources of proteins, and this hypothesis has been confirmed in this article, based on creation of a compositional mixture of red beet and plantain powders. They will gain the amount of proteins in a final product (wheat-and-buckwheat bread), increase the coefficient of protein utility, and lower the coefficient of its surplus
