Abstract
У монографії подано характеристику найбільш поширених снеків та запропоновано класифікацію чипсів із рослинної сировини. Проаналізовані фізико-хімічні та органолептичні властивості сировини (картоплі, буряка, моркви, кабачків, яблук, груш, зерна кукурудзи, сублімованих рослинних порошків та шоколаду) для чипсів та обґрунтовані вимоги до її якості для виробництва безпечного продукту із високими органолептичними показниками. Описані технології виробництва картопляних, овочевих, фруктових, зернових та багатошарових чипсів, зокрема глазурованих шоколадом із додаванням фруктово-овочево-ягідних сублімованих порошків. Проаналізовані фізико-хімічні та органолептичні властивості чипсів із рослинної сировини та вплив режимів технологічних процесів на ці властивості. Монографія призначена для науковців, виробників та широкого кола читачів, які цікавляться та досліджують проблематику виробництва чипсів із рослинної сировини та їх якість і безпечність.
The monograph provides a characterization of the most common snacks and proposes a classification of chips made from plant-based raw materials. It analyzes the physicochemical and organoleptic properties of raw materials (potatoes, beets, carrots, zucchini, apples, pears, corn grain, freeze-dried plant powders, and chocolate) used for chips, and substantiates the quality requirements to ensure the production of a safe product with high organoleptic characteristics. The monograph describes the technologies for producing potato, vegetable, fruit, grain, and multilayered chips, including those glazed with chocolate and enriched with freeze-dried fruit, vegetable, and berry powders. It examines the physicochemical and organoleptic properties of chips made from plant-based raw materials and the influence of technological process parameters on these properties. The monograph is intended for researchers, manufacturers, and a broad audience interested in the production, quality, and safety of chips made from plant-based raw materials.
