Abstract
Досліджено та науково обґрунтовано вплив гідротермічного оброблення на зміни показників якості й кінетику сушіння грибів. The influence of hydrothermal treatment on the changes of parameters of quality and kinetics of drying of mushrooms has been searched and scientifically motivated.
