Abstract
Обґрунтовано вплив теплової обробки на біохімічні зміни їстівних грибів. Експериментально визначений оптимальний режим теплової обробки грибів і грибних напівфабрикатів. The optimum parameters of thermal treatment of mushrooms are set. The chemical and biochemical changes of mushrooms components during thermal treatment were investigated.
