    Study of the mechanism of the retarding effect by using natural gums

    The mechanism of natural gums' effect on the preservation of bread freshness has been studied. The stage of bread staleness was estimated from the deformation of bread’s crumb. Hydrophilicity and texture of bread crumb were also considered. The mechanism of gum’s effect on the process of bread staling was studied by determining the respective change in the state of flour starch crystal structure, which was assessed by qualitative Roentgen phase analysis and the change of bread matter moisture bonds with the addition of gums, which was determined by the method of differential thermal analysis. As the result of the research, it was found that addition of natural gums accommodates bread shelf-life extension by means of crumb texture change, as well as the effect on bread biopolymer moisture bonds

    New method for generation of Carbon molecules and Clusters

    New method for organic pyrolysis for generation of carbon clusters as an alternative powerful laser evaporation of graphite is developed. Firstly fullerene С60 and С33 as well as small carbon molecules and some hydrides molecules and some hydrides molecules in different substances are detected simultaneously. Запропонований новий метод отримання кластерів карбону шляхом піролізу органічних сполук як альтернатива лазерному випарюванню графита. Вперше ідентифіковані фуллерени С60 і С33 як малі карбонові молекули і деякі гідридні молекули в різноманітних зразках.

    The present paper discusses classification of nano-objects, which is based on their size, morphology and chemical nature, The subject of nanochemistry includes those nano-objects whose chemical properties depend on size and morphology, such as spheroidal molecules, anisotropic (2D) and isotropic (1D) nanoparticles, nano-clusters and nanophases. Nanophase is a nano-dimensional part of the microphase whose properties depend on its size. Yhe potential health hazards of nano-objects are associated with their capability of penetrating the body through inhalation, digestion or the skin.
