    Use of unmalted cereals with enzyme preparations in brewing

    Using unmalted grain is one of the ways to improve quality, reduce production costs, and create new types of beer. However, the enzymatic activity of such raw materials is zero, so the use of enzyme preparations is relevant. The purpose of the study was to compare the quality indicators of 100% malt beer and beer with the replacement of malt with unmalted barley using enzymes. The methods of technical and chemical analysis were used to determine the organoleptic and physicochemical indicators of beer. Recommendations have been developed for the intensification of wort preparation using different types of grain raw materials - unmalted barley and rice groats with the addition of enzyme preparations from Novozymes (Denmark) at various stages of brewing. When testing new enzyme preparations (β-glucanase complex, xylanase), filtration time, wort viscosity and β-glucan content. and arabinoxylans decreased by approximately 20% compared to control samples. The use of a new enzyme preparation contributed to a better breakdown of substances, which affected the quality and duration of filtration. This leads to an improvement in the quality of the wort, a reduction in the duration of the process, and a reduction in the cost of raw materials. To ensure the necessary ratio of substances in the wort, it is necessary to introduce complex enzyme preparations - peptide hydrolase, α-amylase, endo-β-glucanase (Ceremis Plus). Preparations containing endo-β-glucanase (Ultraflo Max) should be used at the beginning of mashing to improve the rheological properties of the wort and reduce its viscosity, which improves the filtration process. To obtain beer with the required degree of fermentation during mashing, it is better to use new enzyme preparations (glucoamylase). The practical significance of the research is that the use of large amounts of unmalted grain together with exoenzymes such as Ultraflo Max and Ceremis Plus will allow brewers to produce worts and beers of the same composition and quality as premium worts and beers using only malt.

    Об’єктом дослідження є потреби кавового ринку в Україні та світі. Попит на споживання кави та кавових напоїв зростає впродовж останніх десятиліть, ця тенденція буде зберігатись і далі. Обсяги кавового ринку обчислюються мільйонами тонн, проте за такими об’ємами споживання йдуть величезні об’єми відходів без ефективної технології утилізації. Певну частку споживачів становлять люди, які з певних причин не можуть або не хочуть вживати каву, проте шукають аналогічні за органолептичними показниками напої.У статті теоретично обґрунтовано проведення подальших досліджень з розробки нового типу кавового напою, який може бути представлений удосконаленням класичної технології ячмінної кави за рахунок зміни вихідної сировини. Напій буде мати наближені до кави смако-ароматичні показники та функціональні властивості. Coffee and coffee drinks are most widely consumed in Ukraine and the vast majority of countries in the world. High demand does not decrease, but on the contrary tends to increase; in recent decades, the network of cafes and the range of these products has been expanding. World analysts say that this product is second in sales and is second only to oil. In one calendar year, coffee sales in Ukraine exceed $ 100 million. At the same time, the market for coffee drinks is constantly in need of technology improvement and the development of new products with different taste and aroma properties. In the context of the world coffee market, the Ukrainian coffee market has a steady upward trend and the upward trend will be observed for the next several decades. Today, in terms of coffee consumption, the Ukrainian market is significantly inferior to the leading world markets, but it is characterized by rapid development. Coffee is addictive, a proven scientific fact. Exceeding the individual dose leads to dependence, the body reacts with severe fatigue, drowsiness and even depression. But over time, the effect of caffeine weakens, and to achieve the same effect, a person has to increase the dose of coffee they drink. Along with the production of roasted and instant coffee, there is a huge problem with the disposal of coffee waste, as well as with their impact on the environment. Regardless of where coffee is produced, at home, in a cafeteria or in a factory, millions of tons of waste are generated annually, at least a dozen technologies for the disposal of coffee grounds have been developed, but none of them has received global distribution. Therefore, in parallel with the development of the coffee market, the search for drinks with similar taste and aroma properties, but less harmful to human health and the environment, is becoming increasingly important. Such beverages can meet the special needs of the coffee and coffee beverage market as well as reduce the formation of coffee grounds that are difficult to dispose of. Replacement of raw materials in the composition of barley coffee makes it possible to obtain a drink with the appropriate taste, aroma and functional properties, since malt manifests itself more actively in the process of acquiring specific organoleptic characteristics.
