    Features of the formation of hydrogen bonds in solutions of polysaccharides during their use in various industrial processes

    The paper studies the role of water in stabilizing the ordered structure of biological macromolecules methods of X-ray diffraction analysis, rheology , NMR and IR spectroscopy. The research results can be explained by sol-gel phase transition in solutions of polysaccharides, a significant increase in sorption capacity of these molecules to the surface of solutions of mineral adsorbents with increasing temperature in the purification of liquid foods (juices , alcoholic and soft drinks) , processes retrogradation biological molecules.

    Adsorptive purification of food raw materials and semi-finished products with help of carbon and natural adsorbents

    For the study of adsorptive capacities of paligorskit and for the comparison between them and the adsorptive capabilities o f active carbons in order to create industrial combined sorbents, the authors conducted the research on adsorption of the ethyl impurities with the help of paligorskit, active carbon and combined adsorbents (whereas, active carbons and paligorskit were in the ratio 10:90, 30:70, 50:50). The best results were received when refining aqueous-alcoholic solutions with the help of combined adsorbents. The best results were obtained using a combined adsorbent ratio 10:90.

    Improvement of the quality and safety of alcohol solutions through their adsorptive refining by natural minerals

    Using paligorskit for purifying the aqueous-alcoholic solutions

    Investigated the adsorption properties of palygorskite in the purification of water-alcohol solutions in vacuum. The efficiency of absorption of this natural mineral aldehydes, esters, higher alcohols under vacuum. Palygorskite proved reuse by its regeneration with superheated steam or carbon dioxide.

    Isoflavones distribution in the process of soy protein recovery

    Soy bean contain soy isoflavones which have an effect on different metabolic disorders in human. In this study we have analysed distribution of soy isoflavone between different product under recovery of soy protein. Using mass-spectroscopy and NMR analysis we have detected main isomers in soy bean daidzin and genistin. It was shown that isoflavone fraction is extracted to alcohol solution in processing of protein concentrate. Having analysed products of protein isolate processing we detected that isoflavones were extracted to alkaline solution during protein extraction. Only about 17 % of isoflavones have been remaining in protein isolate. Main part of them was detected in whey water after protein precipitation. And it is possible to elicit them according to standart procedure using extraction by ethylacetate and precipitation by chloroform. Taking into account our results we are proposing to use the by-products of soy protein processing for isoflavone concentrate producing. Соєві боби містять ізофлавони, які можуть впливати на різноманітні порушення метаболізму людини. В даній роботі ми проаналізували розподіл соєвих ізофлавонів під час одержання соєвих білків. Використовуючи масс-спектроскопію та ЯМР аналіз ми виявили, що основними ізофлавоновими ізомерами в соєвих бобах є даідзин та геністин. Нами показано також, що ізофлавонова фракція екстрагується спиртовим розчином під час одержання білкових концентратів. Аналізуючи проміжні продукти процесу виробництва білкових ізолятів виявили, що ізофлавоноїди екстрагувались в лужний розчин під час екстрагування білків. Тільки приблизно 17 % ізофлавонів містилась в білковому ізоляті. Після осадження білків основна частка ізофлавонів була виявлена в сирова точній воді. Їх можна вилучати із сирова точної води за допомогою стандартного методу, використовуючи екстракцію етилацетатом і осадження хлороформом. На підставі одержаних даних пропонується використання проміжних продуктів виробництва соєвих білків для вилучення ізофлавонових концентратів.
