У статті обґрунтовано застосування цукрозамінника фруктози та амарантового борошна у складі шоколадного кексу, для удосконалення технології кексів спеціального призначення та дієтичного спрямування.
The article substantiates the use of fructose sweetener and amaranth flour in the composition of chocolate cupcakes to improve the technology of special-purpose and dietary cupcakes.
